Savoury Muffins – 7 of the most scrumptious recipes!

 

This past Sunday at a lovely Fathers Day brunch, I rediscovered my long, lost love for homemade savoury muffins. I’ve adored them in the past but had completely forgotten that they exist! To celebrate my reignited passion for these delicious baked goods, I thought I’d do a round up of the best of the best savoury muffin recipes, so that both you and I can get baking and enjoy a slightly different (yet equally scrumptious) brekkie or brunch this weekend.

Not to imply that savoury muffins should be reserved solely for the weekends, though. Making a large batch for a quick grab-and-go breakfast during the week is a fabulous idea!

So…move over poached eggs and avocado on sourdough toast (I still love you) and let’s embrace the savoury muffin!

1.Quinoa Omelette Breakfast Cups

Start your day right with these lean breakfast muffins that are full of yummy quinoa, which equals lots of lovely protein. These muffins would be a perfect post work out breakfast between the gym and work.

2.Whole Wheat Cheese and Zucchini Muffins

If you love fresh herbs and zucchini with a hint of feta then this is the recipe for you! The use of whole wheat flour adds an extra healthy bonus to this one.

3.Spinach and Feta Muffins

Yum. Yum, yum! Spinach and feta together is one of my absolute favourite flavor combinations ever! So…spinach+feta+muffin=heaven in my books. This recipe does have some butter though, however, you could swap it out for vegetable oil for a healthier option.

4.Tomato and Basil Muffins

Another awesome flavour combo; these flavoursome morsels would be ideal for anytime of the day. Wouldn’t they make the perfect treat to bring along on a picnic? If you prefer sun-dried tomatoes to fresh, then simply swap them.

5.Salmon and Chive Muffins

If you’re looking for a slightly more elegant muffin (if there is such a thing), then this is the recipe for you. These muffins would make a lovey alternative to sandwiches for a garden high tea at home.

6.Pumpkin, Polenta and Chili Muffins

Impress your friends and family with this unique combination. Savoury muffins with a hint of sweetness from the pumpkin and a kick of chili make for a scrumptious treat.

7.Savoury Picnic Muffins

With hints of Mediterranean flavours, this recipe is my favourite of the lot. With sun-dried tomatoes, olives and rosemary you simply can’t go wrong!
